Instant Pancakes with Blueberry Maple Syrup

I cannot believe I've never blogged about blueberry syrup before...shame on me!
This comes from a Nigella Lawson recipe from her Express series and is incredibly easy and delicious. A quick way to spice up pancake days!


With lemon & sugar...


Instant Pancakes with Blueberry Maple Syrup

Ingredients

Instant Pancake Mix
1 cup blueberries (fresh, frozen or tinned)
1/2 cup maple syrup


Method

In a small saucepan heat maple syrup and blueberries on a medium/low heat until blueberries have burst and mixed with the syrup, around 10 mins.



NB: Left over syrup when cooled and thicken into a lovely conserve :)
