Felt like a real traditional English vegan fish 'n' chip supper which wouldn't be complete without mushy peas! Original recipe from Jamie Oliver.
I served mine with home style fries, Fishy Tofu Fingers, dill pickles and Follow Your Heart Tartar Sauce (below).
Mushy Peas
Ingredients
2 Tbls vegan butter
2 cups peas (I used frozen organic)
1 small handful fresh mint leaves
1 squeeze lemon juice
sea salt
freshly ground black pepper
Method
In a medium saucepan put the butter, peas and the chopped mint.
Put a lid on top and simmer for about 10 minutes.
Add a squeeze of lemon juice and season with salt and pepper.
Then either mush the peas up in a food processor, or you can mash them by hand.
That looks great and sounds super easy. Just what I was looking for for our Not-Fish and Chips dinner!
