Chocolate Almond Apricot Balls
Ingredients
2 cups medool dates, finely chopped
1 cup Dried Apricot, chopped
1/2 cup Almonds, I used blanched ans slivered
1/3 cup sunflower Seeds
1/4 cup Cacao/carob powder
1/4 cup shredded Coconut
Method
Add all ingredients except coconut into a food processor and blitz until mix well.
Form balls and roll in coconut.
Place on parchment paper and refrigerate for 30 minutes.
They also freeze very well.
