Vegan Chocolate Gelato

My hubby made some awesome chocolate gelato in the ice-cream maker. This recipe makes around 3 litres of ice-cream. I don't think we left ours in the ice-cream maker for long enough because it was a bit icy, more like fudgsicles but still delicious!



Vegan Chocolate Gelato
Makes 6 quarts

Ingredients

4 cups sugar
3/4 tsp salt
4 cans coconut cream/milk
4 cups vanilla coconut milk (Silk)
1 Tbls xanthan gum or 3 Tbls cornstarch
10 ounces dark chocolate, melted
1/2 cup cocoa
1 Tbls vanilla extra



Method

Combine sugar, cornstarch/xanthan gum and salt in a saucepan.
Gradually stir in canned coconut milk.
Cook over medium heat until mixture comes to a simmer, stirring gently.
Gradually stir in about 1 cup of the hot mixture into the xanthan gum.
Add remaining hot mixture, stirring constantly.
Cook and stir over a low heat until slightly thickened (about 2 minutes).
Stir in melted chocolate and cocoa.
Beat with a whisk until mixture is smooth.
Stir in vanilla coconut milk and vanilla.
Cover a refrigerate for two ours.
Freeze as per ice cream machine instructions.
If you don't have a machine make sure you stir/blend every two hours for 12 hours.
