Vegetable Latkes (Pancakes)

This vegetable pancakes are a great way to get the kids to eat a bunch of vegetables at once.
Sweet potato and zucchini would be really great too!



Vegetable Latkes (Pancakes)
Serves 4

Ingredients

3 Potato
4 Carrot
1 Onion
1/2 bunch Green onions
2 handfuls English Spinach
2 Tbls pancake mix (or flour)
2 Tbls oil for frying.


Method

Peel potatoes and grate. Squeeze all excess water out of the grated potatoes and place in a large bowl.
Grate carrots and add to the potato mix.
In a food processor, chop onions, green onions and spinach, then add to mix.
Mix vegetables well and stir in flour.


In a large frying pan, heat oil on medium heat and add 2 Tbls of mixture.
Fry on one side for 3 mins or until golden brown.


Flip and repeat on other side.


Repeat this step until all the mixture is done. They will freeze well too!
Serve with desired sauce. Ketchup or sweet chilli sauce are very good!
