My beautiful cousin Emily gave me this delicious recipe. So easy and so healthy!
Emily's Chickpea Salad
1 cup Brown Rice, cooked and cooled
1 can chickpeas, drained & rinsed
2 tsp Moroccan Spice
1 tsp Paprika
1/4 cup Sultanas/Raisins
1/2 bunch Corriander/Cilantro leaves, chopped
Squeeze of lemon juice
Add all ingredients together in a large bowl and add any extra spices to taste.
