I Love Nigella

My love for Nigella Lawson is definitely not a secret. I've loved her a very long time so when I turned vegan I spent a lot of time trying to veganize her recipes. Some of them work some of them don't but I never give up. For anyone who's ever watched her programs you'll know the utter food porn you're in store for plus the kitchen. Oh the kitchen! I covet everything in that woman's kitchen and the kitchen itself...

Her newest book Simply Nigella actually has a ton of vegan recipes! In fact to be precise I counted 65 vegan recipes (with vegan egg replacers) and 20 vegetarian recipes (but you could make them vegan by substituting the dairy). That's pretty amazing! And certainly a huge leap from her other cookbooks, of which I have all ;)

I'd like to mention some of the recipes I've been making from Simply Nigella and also below a list of other Nigella recipes that I've veganized in the past. A list I'm ever adding to!

Toasty Olive Oil Granola
This was delicious. I burned my first lot because I thought I knew better than Nigella Lawson how long they should be in there for. I was very wrong, I'm sorry I doubted her! My second batch turned out perfectly and I love eating it just as a snack!

Breakfast Bars 2.0
I'd been dying to make these but it took my a while to find GF corn flakes and I wanted to make sure I had all the ingredients for the first batch at least! OMG SO GOOD!

Warm Spiced Cauliflower and Chickpea Salad with Pomegranate Seeds
This was nice but a little bland so I added a spritz of lemon juice and it was delicious! The pomegranate seeds really work adding a bite of sweetness every now and then.

Roasted Radishes
I didn't realise radishes tasted so much less bitter when roasted!

Pea and Broccoli Soup
I really liked this despite it's simplicity - I used mint sauce because I didn't have any mint tea bags but it was still very refreshing!

I made this the minute I bought the book came out because I had read it was a vegan chocolate cake and I was like whaa whaaaa? So I made it for my birthday...and promptly ate it :)

Nigella Express

I have veganized the following recipes from Nigella Express - one of my favourite cookbooks and tv series...

Japanese Cooking: Contemporary & Traditional

I have always loved Japanese food so i was very excited when I picked up my copy of "Japanese Cooking: Contemporary & Traditional"by Miyoko Nishimoto Schinner full of all vegan Japanese recipes.

Daikon, Atsu-Age and Spinach in a Miso Broth

I also have "Artisan Vegan Cheese" by the same author and have never been focused enough to try anything. However, now that the Miyoko's Kitchen has opened you can buy all those amazing cheeses online!!

These are my first samples; Sharp Farmhouse and Smoked Farmhouse but both were amazing!!!!

Vegan With A Vengence

Here are the recipes I've made from Vegan With A Vengence available on Amazon. I'm slowly getting through the brilliant cookbooks by Isa Chandra Moskowitz and Terry Hope Romero from The Post Punk Kitchen.

Chickpea & Spinach Curry

This was a great simple Indian curry dish and very healthy. Delicious!
My version was minus the chickpeas cause I didn't have any. I used kale, peas, cauliflower and carrots.

Raw Food

I'm trying to get back into raw food, for obvious reasons that it's healthy, vegan and generally pretty easy.
I last started in Winter which was stupid because all you want in the colder months is comfort food.

Here's some recipes I've been trying...

Save the Salmon Patties with Hollandaise Sauce

This is one of Ani Phyo's from Ani's Raw Food Kitchen. The genius part of this recipe for me was that the main ingredient was carrot juice pulp. As someone who LOVES carrot juice but feels sad throwing out all the lovely pulp it was great to find that Ani has a number of recipes that use it.

Maki with Marinated Spinach and "Peanut" Sauce

This dish from Ani Phyo's Raw Food Essentials was delicious and very filling. I used mushrooms instead of parsnips and it was delicious.

Gazpacho Andaluz

This dish from Ani Phyo's Raw Food Essentials was just like a chunky gazpacho but healthier. I added avocado too because I love it in gazpacho. So refreshing on a hot Summer's night.

Teriyaki Noodles

This dish from Ani Phyo's Raw Food Essentials was really delicious. Refreshing and sweet.

Marinated Portabello Steaks and Brazil-Broccoli Mash served with Mushroom Gravy

This is one of Ani Phyo's from Ani's Raw Food Kitchen. The Mushrooms were delicious and the mash was much tastier than I was expecting, the Brazil nuts and broccoli went well together.

Fettuccini Squash Noodles in Alfredo Sauce

This is one of Ani Phyo's from Ani's Raw Food Kitchen. It was really tasty but I cooked for servings and ate two of them which made me feel a bit ill. I used a coffee grinder to grind the nuts to a powder for the sauce.

Using a spiralizer give you the texture or noodles but all the goodness of vegetables. It's amazing how many raw vegetables taste good this way! I bought mine online for around $40.

Glute-Free Vegan

These recipes are from the cookbook Gluten-Free Vegan by Susan O'Brien.

Spicy Quinoa Pilaf

I couldn't find it on her blog so I won't post the recipe myself but I saw it posted on Emily is Gluten-Free blog so you can get it from there. I added green beans and english spinach :)
I found it a bit salty so I might go easy on the stock next time.

Veggie-stuffed Bell Peppers

These were really yummy and far more filling than I expected (we only needed one capsicum each). They needed a little bit more salt than was in the recipe though.

Here are some recipse from Robin Robertson's book 1,000 Vegan Recipes.

Corn Fritters
These were easy but I found them a bit bland so might add something extra next time.

Spicy Indian Cauliflower

It was so quick and simple but had a lot of flavour.

Kasha (Buckwheat Groats) with Roasted Sweet Potatoes and Peas

YUMMY

Three-Bean Cassoulet

This was a really warm hearty dish

Appetite for Reduction

I just bought Appetite for Reduction by Isa Chandra Moskowitz (author of Veganomicon or Vegan With a Vengence). They are all very low in fat, sugar and salt.

2nd Avenue Vegetable Korma

This was yummy but much milder flavour than my usual curries.

Pasta e Faioli with Spinach (I used backbean pasta)

This was a tasty and healthy pasta sauce base. My pasta wasn't very tasty though :(

Tamarind BBQ Tempeh & Sweet Potato (served with Polenta Stuffing)

I served this with spinach. The tempeh & sweet potato (I used purple sweet potato) mix was delicious! BBQ flavour, would be nice on a wrap!

Chickpea Piccata with Cauliflower Mashed Potatoes

This was really tasty!

Cabbage & Pea Curry

This was really yummy. Simple flavours but it really worked. Definitely would make this again!
