This is a simple nachos recipe that you can just add to as you want. Nacho Cheeze Sauce recipe from Oh She Glows blog. Serves two (actually it probably serves 3-4 but we're greedy bastards).
1 can refried beans
1 jar salsa
2 tomatoes, chopped
Nacho Cheeze Sauce (recipe below)
Place corn chips on oven proof plates and heat at 180 until corn chips are slightly browned.
Next make the Nacho Cheeze Sauce.
Meanwhile in a saucepan mix the refried beans and salsa on a medium heat until heated through.
Spoon bean mixture onto the corn chips, then spoon the cheese on top.
Heat in oven for 10-15mins.
Serve with guacamole.
Nacho Cheeze Sauce
3/4 cup raw cashews
1/4 cup + 1 Tbls nutritional yeast
2 tsp chili powder (I found it a bit spicy so I'd only add 1 tsp next time)
1 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp salt
Ina food processor pulse the cashews until blended. Add the rest of the ingredients and blitz until mixed.
