Spiced Peach Jam

Spiced Peach Jam


3lbs ripe peaches
1/2 tsp cinnamon
1/2 tsp all spice
6oz liquid pectin
1/4 cup lemon juice
7 1/2 cups sugar


Peel peaches and chop finely.
Please peaches, lemon juice, sugar and spices in a large pot and mix well.

Boil for 1 minute, stirring constantly, then remove from heat.
Mix through the pectin and stir constantly for 5 minutes.
Skin away any froth and ladle into sterilized jars.

The hot mix is also delicious over vanilla ice-cream!
