Potato and Leek Soup

I got some leeks on sale so last night I thought I'd make an old favourite.


Potato & Leek Soup
Serves 4
Calories per serve: 253


Ingredients

55g Vegan butter
1 Onion chopped
3 Leeks sliced
225g Potatoes peeled and chopped into small cubes
850ml Vege stock
salt & pepper for seasoning
Chives chopped (optional)


Method

In a large saucepan on a medium heat fry up butter, onion, leeks and potato for 5 minutes until soft but not brown.
Add stock and bring to boil.



Cover and simmer for 15minutes.
Pour liquid into blender or food processor and blend until smooth.
If you want a creamier soup add in some non-dairy milk when blending.
Put back on stove for a minute and add salt and pepper to taste and chives.
